A cold room operates at 0°C to +10°C for fresh product storage. A freezer room operates at −18°C to −25°C for frozen product storage. Freezer rooms require thicker insulation panels (100mm vs 60–80mm), more powerful refrigeration systems, insulated floors, anti-condensation door heaters, and more aggressive defrost cycles — all of which add to both capital and operating cost.

Cold temperatures at −18°C to −25°C will conduct through an uninsulated floor into the building slab, causing floor condensation, damp, and structural damage over time. Insulated PUF floor panels with aluminium grating prevent this cold bridging, protecting both the building and maintaining the room temperature more efficiently.

At −18°C to −25°C, moisture in the air inside the room rapidly forms frost on the evaporator coil, reducing its efficiency. Defrost systems periodically melt this frost. Hot gas defrost uses the refrigerant discharge gas from the compressor to heat the evaporator coil directly — it is the fastest and most energy-efficient defrost method, and does not warm the room air like electric defrost heaters do.

Frozen shrimp in standard 2 kg block packs stacked on racking to 3m height can be stored at approximately 500 kg per sq. metre. A 10 tonne capacity would require approximately 20 sq. metres (200 sq. ft.) of floor area with proper racking.
