Green bananas are loaded into the sealed ripening chamber. The room is brought to +16°C to +18°C and 90 to 95% relative humidity. Ethylene gas is injected at 100 to 150 ppm concentration for 24 hours, triggering the bananas' natural ripening response. Over the next 3 to 5 days, temperature is maintained and CO₂ is vented out as the bananas ripen uniformly to the target colour (typically Grade 3 to Grade 5 on the Dole colour chart for supermarket supply).

Any climacteric fruit responds to ethylene-triggered ripening. Common applications in Tamil Nadu are banana, mango, avocado, papaya, sapota (chikoo), kiwi, and tomato. Non-climacteric fruits (citrus, grapes, pineapple, strawberry) do not respond to ethylene and cannot be artificially ripened.

Yes, with some adjustment. Banana ripening uses +16°C to +18°C and 90 to 95% RH. Mango ripening uses +20°C to +22°C and 85 to 90% RH. The same chamber can be used for different fruits at different times by adjusting the temperature and humidity setpoints. Simultaneous ripening of both in the same chamber is not recommended as the different temperature requirements will compromise one or the other.
